Spaghetti with Browned Butter and Parmesan Cheese

Ingredients

  • 1 lb. Spaghetti 

  • ½ Stick of Unsalted Butter

  • ¼ Cup Grated Parmesan Cheese

  • Salt and Pepper to Taste

Method

  • Add a little salt to boiling water and cook spaghetti per the packaged instructions.

  • When pasta is cooked al dente, drain the pasta in a colander (do not rinse) and place back into the pot (off the fire).

  • Over medium high heat, melt the butter.

  • To brown the butter, continue cooking until it foams up and then starts to subside. Begin to swirl the butter so it does not burn.

  • Once the butter has turned a brownish, almost cinnamon color, pour over the top of the spaghetti.

  • Add the grated parmesan cheese, more salt to taste, and plenty of black pepper.

  • Stir Spaghetti to evenly distribute the butter and cheese, and transfer to a warmed platter or directly to warmed plates.
