Grilled Flank Steak with Charred Corn, Red Onion, and Basil Salsa

Ingredients

  • 1 large ear of corn, shucked

  • 4 tablespoons olive oil

  • 1 flank steak, about 1 1/2 pounds

  • 1/2 teaspoon allspice

  • 1/2 teaspoon oregano

  • Salt and pepper to taste

  • 1/2 cup small diced red onion

  • 1/8 cup of fresh basil, finely chopped

Method

  • Preheat grill to high heat.

  • Rub corn with 1 tablespoon olive oil.

  • Rub flank steak on both sides with 1 tablespoons of olive oil. Season with allspice, oregano, salt and pepper.

  • Place the corn and steak on the hot grill.

  • Cook the corn for 5 minutes, turning occasionally, until slightly charred. Remove from the grill and cool slightly.

  • Cook the flank steak for 10 - 12 minutes until medium rare, turning once halfway through cooking. Remove from grill and tent with aluminum foil to rest for 10 minutes.

  • While the steak rests, finish the salsa by cutting the kernels off the cob and toss with the red onion, basil, and remaining olive oil. Season with salt and pepper to taste.

  • Cut the steak into thin slices against the grain and serve topped with the salsa.
