Baked Lamb with Feta and Tomato

Ingredients

  • 2 pounds lamb from breast or shoulder

  • 1 pound feta cheese

  • 2 pounds tomatoes, peeled and sliced

  • 1 1/2 teaspoon salt

  • Pepper to taste

  • 2 tablespoons olive oil

Method

  • Preheat oven to 350 degrees.

  • Trim all fat from the meat and cut into chunks. Put in an oiled casserole dish.

  • Crumble the cheese on top of the meat. Cover with tomato slices.

  • Sprinkle with salt, pepper, and oil.

  • Bake, uncovered, for 2 hours or until meat is tender, basting occasionally with the pan drippings.
