Baked Lamb with Feta and Tomato
Ingredients
2 pounds lamb from breast or shoulder
1 pound feta cheese
2 pounds tomatoes, peeled and sliced
1 1/2 teaspoon salt
Pepper to taste
2 tablespoons olive oil
Method
Preheat oven to 350 degrees.
Trim all fat from the meat and cut into chunks. Put in an oiled casserole dish.
Crumble the cheese on top of the meat. Cover with tomato slices.
Sprinkle with salt, pepper, and oil.
Bake, uncovered, for 2 hours or until meat is tender, basting occasionally with the pan drippings.
