Baked Artichoke Frittata

Ingredients

  • 1 package (8 ounce - 9 ounce) frozen artichoke hearts

  • 6 eggs

  • 1/2 cup half-and-half or whole milk

  • 1/4 teaspoon salt

  • 1/8 teaspoon pepper

  • 1/8 teaspoon ground nutmeg'

  • 1 cup shredded jack cheese

  • 1/4 cup grated parmesan cheese

  • 1 teaspoon butter

Method

  • Cook artichoke hearts according to package directions. Drain well.

  • Spread artichoke hearts evenly in a well buttered two-quart baking pan.

  • Beat eggs with milk, salt, pepper, and nutmeg. Stir in the jack cheese. Pour egg mixture over artichokes.

  • Bake uncovered in a 350 degree over for 30 minutes. Sprinkle evenly with parmesan cheese.

  • Return to oven and back for an additional 8 minutes or until frittata is puffed and lightly browned.
