Baked Artichoke Frittata
Ingredients
1 package (8 ounce - 9 ounce) frozen artichoke hearts
6 eggs
1/2 cup half-and-half or whole milk
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ground nutmeg'
1 cup shredded jack cheese
1/4 cup grated parmesan cheese
1 teaspoon butter
Method
Cook artichoke hearts according to package directions. Drain well.
Spread artichoke hearts evenly in a well buttered two-quart baking pan.
Beat eggs with milk, salt, pepper, and nutmeg. Stir in the jack cheese. Pour egg mixture over artichokes.
Bake uncovered in a 350 degree over for 30 minutes. Sprinkle evenly with parmesan cheese.
Return to oven and back for an additional 8 minutes or until frittata is puffed and lightly browned.
