Roast Chicken with Honey and Cinnamon
Ingredients
1 roasting chicken (approximately 3 pounds)
¼ cup extra virgin olive oil
1 tablespoon honey
¼ teaspoon ground cinnamon
1 ½ tablespoons dry oregano
Salt and pepper to taste
2 cups chicken broth
Method
Preheat oven to 350 degrees Fahrenheit.
Rinse chicken inside and out with cold water. Completely dry with paper towels and set aside.
Combine extra virgin olive oil, honey and cinnamon and whisk thoroughly.
Place chicken in a roasting pan, breast side up, and completely brush breast, legs, and wings with whisked mixture.
Liberally season chicken with oregano, salt, and pepper.
Pour chicken broth directly into roasting pan so that it completely covers ¼ inch of the bottom of the pan.
Roast, uncovered, for about 1 ½ hours, basting with pan juices periodically. Roast longer if necessary – you’ll know the chicken is done when the thigh juices run clear.
