Roast Chicken with Honey and Cinnamon

Ingredients

  • 1 roasting chicken (approximately 3 pounds)

  • ¼ cup extra virgin olive oil

  • 1 tablespoon honey

  • ¼ teaspoon ground cinnamon

  • 1 ½ tablespoons dry oregano

  • Salt and pepper to taste

  • 2 cups chicken broth

Method

  • Preheat oven to 350 degrees Fahrenheit.

  • Rinse chicken inside and out with cold water. Completely dry with paper towels and set aside.

  • Combine extra virgin olive oil, honey and cinnamon and whisk thoroughly.

  • Place chicken in a roasting pan, breast side up, and completely brush breast, legs, and wings with whisked mixture.

  • Liberally season chicken with oregano, salt, and pepper.

  • Pour chicken broth directly into roasting pan so that it completely covers ¼ inch of the bottom of the pan.

  • Roast, uncovered, for about 1 ½ hours, basting with pan juices periodically. Roast longer if necessary – you’ll know the chicken is done when the thigh juices run clear.
